Coconut Covered Banana Pops
This makes a healthy treat and Puerto Ricans enjoy the beautiful tropical fruits for their snacks.
6 large bananas, peeled
2 1/2 cups orange juice or pineapple juice
1 1/2 teaspoons ground cinnamon
3 cups shredded coconut
12 wooden kebab skewers or popsicle sticks
Cut bananas in half and place skewer or stick in each banana piece. Sprinkle with cinnamon. Drizzle orange or pineapple juice over bananas. Next roll bananas in shredded coconut. Serve on a stick.
Date Melt
Dates are a tropical treat and Puerto Ricans enjoy appetizers such as this Puerto Rico recipe.
6 pitted dates
6 slices of bacon
cheddar cheese
6 toothpicks
Chop cheese into cubes small enough to stuff inside the pitted dates. Wrap bacon around stuffed date and stick toothpick through the middle. Place on grill pan and grill for about 3 minutes, turn and grill for 3 more minutes, and turn and grill for another 3 minutes, until bacon is cooked (bacon should be
browned but not burned. Let cool for a few minutes and then serve.
