Easy Muffin Recipes

Kids enjoy baking muffins and mini muffins. Muffins are tasty treats and can be a healthy choice. They're perfect to serve at a party or picnic or just to munch on for an after-school snack.

Easy Muffins

1 3/4 cups all purpose flour
2 1/2 teaspoon baking powder
3/4 teaspoon salt
3/4 cup milk
1/4 cup sugar
1/3 cup melted butter
1 egg
strawberry jam
shortening or cooking oil spray

Preheaat oven to 400F degrees (200C). Grease 12 muffin pans with some shortening or cooking oil spray or put a paper bake cup into each muffin cup.

Measure the flour, sugar, baking powder, and salt into medium mixing bowl. Stir to mix with a wooden spoon. Use a fork to beat the egg in the small mixing bowl. Add milk and oil. Beat with fork until well mixed. Pour milk mixture over flour mixture.

Stir with wooden spoon only until all flour is wet. Batter should be lumpy. Do not stir too much or muffins will be hard.

Spoon half the batter into muffin pans until each cup is about 1/3 full. Put 2 teaspoonfuls of jelly or jam on top of the batter in each cup. Fill muffin cups with remaining batter.

Bake until muffins are golden. This will take 20 to 25 minutes. Turn off oven. Remove muffins from oven. Remove muffins from pan with a table knife. Cool 5 minutes. This recipe is from Stephanie, age 13, from New Zealand.

Chocolate Mini Muffin

1 1/2 cups flour
1 1/2 baking powder
1/2 teaspoon salt
1/3 cup cocoa, sifted
1/3 cup sugar
1 egg, beaten
1/3 cup oil
1 cup milk
1 teaspoon vanilla

Combine flour, baking powder, cocoa, and sugar in a bowl. Mix together in a separate bowl the egg, oil, milk, and vanilla. Add the dry ingredients to the bowl and stir gently without over mixing.

Lightly grease mini muffin pans. Pour 2 tablespoons of the mixture into each muffin cup. Bake for 15 minutes at 400F degrees.

Makes about 2 dozen mini muffins.

Aunt Prude's Yummy Blueberry Muffins

4 tablespoons shortening
1/2 cup sugar
1 egg, beaten
2 1/4 cups flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup milk
1 cup blueberries

Topping:
2 tablespoons sugar
1/4 teaspoon Cinnamon
1/4 teaspoon nutmeg

Cream together shortening and sugar. Then add egg. Stir in flour, baking powder, salt, cinnamon, and nutmeg. Next stir in milk. Then add blueberries.

Fill greased muffin tins almost full. Bake at 425F degrees for 25 minutes. Mix topping ingredients and sprinkle on top of muffins when they're hot out of the oven.
