Amie's Christmas Cookies

These Zucchini Cranberry White Chocolate Chip Cookies are great to bake at Christmas time.


Ingredients:

1/3 cup honey or agave nectar
1/2 cup brown sugar
1/2 cup butter, softened
1 egg
1 tablespoon vanilla extract
2 cups whole wheat
1/2 teaspoon baking soda
1 teaspoon salt
Dash of cinnamon
Dash of nutmeg
12 ounces white chocolate chips
1 1/4 cups finely shredded zucchini
1/2 cup dried cranberries

Directions:

Pre-heat oven to 350F (180C) degrees.

Mix together egg, butter, brown sugar, honey or agave, and vanilla in a large bowl.

Combine flour, baking soda, salt, cinnamon and nutmeg into a separate smaller bowl. Add this mixture to the large bowl and mix well.

Stir in chocolate chips, dried cranberries and zucchini. Mix well. Use a spoon to make cookie drops onto a baking sheet.

Bake for 10 minutes or until brown and fully cooked.

these are yummy, i always have some zucchini in my freezer and i love dried cranberries in a cookie
