Sweet Pear, Apple n’ Blackberry Pie

Sweet Pear, Apple n’ Blackberry Pie

This sweet pie is loaded with pears, Honey Crisp apples and blackberries to make it an irresistible delight.


Ingredients:

2 cups all-purpose flour
1/2 teaspoon sea salt
2/3 cup butter
5 tablespoons water
1 cup sugar
3 tablespoons cornstarch
½ teaspoon all spice
¼ teaspoon chili powder
¼ teaspoon ground ginger
1 tablespoon ground flax seeds
1 ½ tablespoon all-purpose flour
4 medium pears, peeled and thinly sliced
1 ½ cups fresh blackberries
3 medium Honey Crisp apples, peeled and thinly sliced
3 tablespoons milk
1 teaspoon cinnamon
1 teaspoon sugar

Directions:

Preheat oven to 450F degrees (230C).
In a large bowl, combine 2 cups of flour and sea salt. Cut in butter and water; mix well to combine until dough is formed. Mold dough into two halves.

On a flat floured surface, roll half of the pastry dough into a 12-inch circle. Line a 9-inch pie plate with pastry and fold under excess. Place into the oven; bake for 7 minutes or until golden brown. Set aside to cool. On a flat floured surface, roll remaining pastry dough into a 12-inch circle; set aside.

Reduce oven heat to 375F degrees (190C).
Meanwhile, in a large saucepan stir together the sugar, cornstarch, all spice, chili powder, ginger, ground flax seeds, flour, pears, blackberries and apples. Cook over low heat for 3 minutes, then raise heat to medium. Cook until mixture thickens and begins to bubble. Transfer fruit mixture to the baked pie shell. With a brush, drizzle the edge of the pie with milk. Place pastry dough on top and around pie edges. Brush the top of the pastry dough with milk, sprinkle with cinnamon and sugar. Bake for 20 minutes or until golden brown.

Set aside to cool before serving. Serve warm. Enjoy!
