Strawberry Cupcakes with mint and orange frosting
Perfect for afternoon tea. These cupcakes are yummy!
2 cups plain flour
2 medium sized eggs
1 cup granulated sugar
2 cups icing sugar
250 grams unsalted butter
1 tablespoon baking powder
275 grams chopped strawberries
1/2 cup orange juice
1 cup mint leaves
Preheat oven to 420F degrees (210C). Beat eggs with a hand whisk or an electric beater. In another mixing bowl,beat sugar with butter. Fold in the eggs. Lastly,fold in the flour.
Pour the mixture evenly into the greased cupcake or muffin tray and bake in the preheated oven for 10-20 minutes. If you want, you can even use paper cupcake cases. Mix icing sugar with orange juice and mint leaves. Spread the icing on top of your cupcakes and serve with tea or coffee.
