Sri Lankan Cheese Cake

This is a Sri Lankan dessert made with dates and plums.


Ingredients

For the pastry:

1 kg + 225 grams flour
500 grams (2 1/2 cups) butter
Pinch of salt
250 ml (1 cup) cold water (or more, if needed)

For the filling:

225 grams (1 cup) any nuts you wish
225 grams (1 cup) dates
225 grams (1 cup) plums
1 kg (4 1/2 cups) sugar
1 kg (7 1/2 cups) semolina (rulang)
Rind of 2 oranges
500 grams (2 1/2 cups) butter
16 eggs
Vanilla extract

Method:

First make the pastry using the ingredients listed for the pastry. First, rub chopped butter into the flour and salt using your fingertips. Next add cold water. Then mix until incorporated and the mixture begins to hold together. Finally, knead until smooth. Don't over-mix the pastry or it will become too tough.

For the filling, beat eggs and sugar well and set aside. Melt butter and add semolina. When it comes to a light brown color add all the other ingredients one by one.

Take the the pastry dough and press it in a small muffin pan which should be buttered and stuff the filling in each of them. Bake this for 20 to 30 minutes.
