Quick And Easy Piña Colada French Toast Rolls

A delicious treat for Sunday mornings. Enjoy!


4 bread slices
4 eggs
2 tablespoons coconut milk
2 tablespoons pineapple juice
4 tablespoons caster sugar
Butter or oil for frying
8 scoops of vanilla ice-cream
1 tin pineapple chunks


Combine eggs, coconut milk, sugar, pineapple juice in a bowl. Mix well. Coat the bread slices with the egg batter and shallow fry and allow to cool.

Place a parchment paper onto your working surface. Place a single French toast onto the paper. Fill each bread slice with a handful of pineapple chunks along with two scoops of ice-cream. Roll the bread slice into a roll along with the parchment paper.

Prepare the rest of the rolls with the same method. Remove the parchment paper. Cut the French toast into halves. Serve immediately or refrigerate.
