Cookie Cake

2 1/2 cups cookie crumbs
1 1/2 cups water
2 tablespoons sugar
5 tablespoons cocoa powder
5 teaspoons unsalted butter
chocolate syrup (optional)

Mix cookie crumbs with water to create a smooth paste. Mix cocoa powder and sugar with the paste.

Grease a baking tray with butter. Pour mixture into tray. Bake it at 325F (180C) degrees for 6-7 minutes . Pour chocolate syrup over the top. This recipe is from Naaz, age 10, from India.

Cheesy Pita Wedges

1 package pita bread
1/2 stick of butter, melted
2 tablespoons extra virgin olive oil
4 cloves of garlic, crushed and minced
fresh basil, chopped
1 teaspoon salt
1/2 cup Parmesan cheese, grated

Cut each pita in half, then cut into four wedges. In a bowl, mix together butter, olive oil, garlic, basil and salt. Use a brush to spread butter mixture over each pita wedge. Cover each wedge with a good amount of Parmesan cheese. Place wedges on a baking tray and bake at 325F degrees for about 10 minutes or until crisp. Serve as a snack or appetizer.

Grilled Circles

Ritz crackers
Cheese slices (American, Swiss, etc.)
Mustard

Cut cheese slices into circles to fit on each cracker. Place on a dish in the microwave and heat up for about 15-25 seconds on high or place on a grill pan and grill for 1 minute until cheese is melted and slightly browned.

Remove and place a dot of mustard on each cracker. YUM!

Note: This is a recipe from Henrietta, age 11, of New Zealand. In New Zealand, lemonade is a carbonated, sweet lemon-flavored soft drink such as Sprite or 7-up. Scones are similar to American biscuits.

Lemonade Scones

1 cup self raising (self rising) flour
300 milliliters (8 ounces) cream
1 can of lemonade (carbonated, sweet lemon-flavored soft drink)
1/2 tsp salt

Mix all ingredients into a bowl until it forms a smooth dough. Tip out on a well floured bench then cut into squares. Bake at 220C degrees (425F degrees) in a fan bake oven for 15 to 20 minutes until golden on top. Serve as an afternoon snack with a dollop of cream and jam.

Pretzel Freezes

Pretzels
Peanut butter
Cranberries

First smear peanut butter on pretzels. Add refrigerated cranberries. Next freeze for about 30 minutes or until the peanut butter hardens. Then take them out and enjoy!

Chinese Popcorn

3 tablespoons butter
1 tablespoon sesame oil
1 teaspoon soy sauce
10 cups already popped popcorn

Melt butter then add oil and soy sauce. Pour over popcorn and toss. This is a super funky popcorn recipe.

Roasted Soy Nuts

4 ounces each of nuts (cashews, almonds, walnuts, and peanuts)
4 ounces each of seeds (sunflower and pumpkin)
2 tablespoons soy sauce
1 teaspoon salt

In a bowl combine nuts and seeds. Add soy sauce and stir well. Roast in oven for 10-15 minutes in a 360F degree oven. Toss once or twice to ensure even roasting. Makes a great party snack.

Sandwich House

8 slices bread, crust removed
sandwich filling
pretzel sticks
cottage cheese or pimento cheese spread

Make 4 sandwiches with your favorite sandwich spread (peanut butter, pimento cheese, etc.). Remove crust. Cut 2 sandwiches in half to make 2 rectangles per sandwich. Next cut the other 2 sandwiches to make 4 triangles per sandwich.

Stack rectangles to make base of house. Place 6 triangles on top of base to make a pointed roof. Then gently spread cheese spread over roof. Place pretzels on top of spread.

Use a baby carrot to make a chimney with cheese spread to hold in place, sliced tomatoes or cucumbers for doors and windows. Make a pathway or fence using pretzels and other raw vegetables for trees and flowers.

Nut'N Fruit Bars

1 10 ounce jar apple sauce
1/2 cup dried apricots, chopped
3/4 cup raisins
1 cup turbinado sugar
1/2 cup walnuts, chopped
1 cup sunflower seeds
1/2 cup sesame seeds
1 cup pumpkin seeds
1 cup rolled oats
1 3/4 cup self-raising flour
1 cup shredded coconut
2 eggs

Grease a square 8X8" baking pan with parchment. Add applesauce, dried fruit, nuts and seeds together above together in a large bowl and mix well with a wooden spoon.

Add remaining ingredients and stir more. Spoon mixture into baking pan and flatten mixture. Bake 25 minutes, then carefully remove from oven and allow time to cool.

Cut into bars and eat for breakfast or snack any time.

Nutty Peanut Butter Logs

3 medium potatoes, peeled, boiled, and mashed
1 onion, chopped
1 bell pepper (red or green) seeded and chopped
1 carrot, peeled and grated
1 zucchini, grated
1 tablespoon mixed herbs
1/4 cup cheddar cheese, shredded
1/4 cup crunchy peanut butter
1 egg, beaten
1/2 cup dried breadcrumbs

Heat frying pan, then add oil, heat up more and add onion, bell pepper, and carrots and fry for 5 minutes. Add zucchini and cook for another 5 minutes.

Next, in a large bowl add mashed potatoes, herbs, cheese, peanut butter, and fried vegetables. Add a little salt and pepper. Let cool, then add 1 egg, beaten. Use your hands to form about a dozen 2" long stick or log shapes. Place on cookie sheet on wax paper and refrigerate for 1 hour or until firm.

In a small bowl, add one beaten egg and in another small bowl add breadcrumbs. Dip each log into the egg then breadcrumbs.

Heat oil in a deep fryer and fry logs for about 3-5 minutes until golden brown. Drain on paper towels. Serve hot or cold as a healthy veggie snack.

Banana Milk Treat

1/4 cup of boiled white rice (leftover rice, not fresh hot rice)
2 1/2 tablespoons of plain yogurt
1/2 cup milk
2 bananas, sliced
2 tablespoons sugar

Mix together in a medium sized bowl cold boiled rice, yogurt, and milk until all ingredients are smooth. Next add sugar to mixture and stir until dissolved.

Next add the banana slices and stir all the ingredients.

Makes a delicious breakfast or snack.

Biscuit Mini Pizzas

1 can biscuits in a tube (such as Pillsbury)
1 jar pizza sauce
1 cup grated cheese
1/2 cup of frozen broccoli, thawed
Add any other healthy pizza toppings

Push individual biscuits flat and press each biscuit into muffin tin. Cover with pizza sauce. Top with broccoli and cheese, and your favorite toppings. Bake according to directions on biscuit tube, approximately 10 minutes. These snacks are great refrigerated for the next day!
