Golden Egg Casserole

Try this easy and delicious bread casserole. Yum!
12-15 plain white or brown bread slices
6 sliced hard boiled eggs
3 cups sliced sausages
1/2 teaspoon dried oregano
1/2 cup tomato paste
1 cup grated mozzarella cheese
2 medium sized sliced red bell peppers
1 cup sliced black olives
Preheat the oven to 350F (180C) degrees. Heat oil in a pan. Add oregano. Saute the sausages until cooked. Add the vegetables along with 2 tablespoons tomato paste and cook for another 2-3 minutes.
Grease an oven-proof casserole dish. Place a layer of bread slices into the greased dish. Place a layer of cooked eggs, olives, sausages and bell pepper on top. Spread 1/2 cup mozzarella cheese on top. Cover the entire filling with a second layer of bread slices. Spread the rest of the tomato paste along with grated mozzarella cheese. Sprinkle a dash of oregano on top and bake in the pre-heated oven for 15-20 minutes until the bread turns crisp and golden.
