Far East Dessert Squares made with rice noodles

We love this easy-to-make dessert after a meal of Asian food or after any meal! If you need a gluten-free diet, this works well because of the rice noodles. Enjoy!


8 ounces rice noodles (uncooked)
1 cup dried apricots, finely chopped
5 large eggs
1 cup sour cream
½ cup butter, melted
1/3 cup sugar
2 teaspoons cinnamon
1 cup coconut milk
3 cups whole milk

Preheat oven to 350°F (180°C). Butter a 13 x 9 x 2-inch glass baking dish. Spread uncooked noodles over bottom of prepared dish and sprinkle with dried apricots.

Whisk eggs, sour cream, butter, sugar and cinnamon in large bowl until smooth. Add and whisk in coconut milk and whole milk and pour mixture over noodles. Let dish stand 5 minutes before putting in oven.

Bake until set in center, about 1 hour. Cut into squares. Serve warm or at room temperature.

Serves 8 to 10.
