1 medium sized finely chopped eggplant 1/4 cup mozzarella cheese 6 bread slices Pinch of dried oregano
Preheat oven at 350 F (180 C) degrees. Process all the ingredients in a mixer or a food processor. Drop small dollops of the mixture onto a greased oven tray. Sprinkle oregano on top. Bake in the oven for 15-20 minutes until the fritters turn crisp. Serve hot with your favorite dip.
