Cream Cheese Almond Filled Crescents

I love this cookie! Time consuming but worth all the work..they are yummy!


Pastry:

2 1/4 cups Flour
1/4 cup powdered sugar
1 cup soft butter
2 3-ounce cream cheese
1 teaspoon grated lemon peel
1 teaspoon lemon juice

Filling:

Solo Almond Filling

Lightly spoon flour into measuring cup. In bowl combine all pastry ingredients; blend to form soft dough. Cover and chill about 30 minutes.

Preheat oven to 350F (180C) degrees.

Divide pastry into four parts. On floured surface roll each to a 6" square. Use a circle cookie cutter and cut each square into a circle. Use a round cookie cutter (biscuit).

Place one rounded teaspoon of almond filling into the center of each circle, fold in half, seal edges with a fork. Place on ungreased cookie sheet.

Bake for 18 - 22 minutes.

Sprinkle with powered sugar.

Makes: 3 dozen

Story Behind This Recipe:

Every year at Christmas I power bake with my friend. We bake for two days straight from morning to morning, usually from 10:00am till 2:00am both days.

We make over 93 dozen cookie and make beautiful trays up to give as gifts. We always have at least 12 - 16 different varieties.

I'm always trying to find a new cookie that is even better than the ones we make - which is very hard to do because we love all our cookies. But this is the newest and most favorite one so far...
It's time consuming but worth all the work..they are yummy !!
