Pikelets

I make this pikelet recipe every Saturday morning when I get up out of bed. Pikelets are small, thick pancakes. This recipe makes about 5 pikelets. I like to serve it with a pad of butter and sifted icing sugar but you can also serve it with jam, honey or maple syrup. It is so easy and only takes me about 1o minutes to make myself a pikelet. My little sister Therese especially loves this recipe.

Ingredients:

1 cup flour
2 teaspoons baking powder
1 cup milk
1 egg
2 tablespoons cooking oil
1 teaspoon vanilla
sifted icing sugar
butter

Method:

In a mixing bowl, stir together ingredients until only slightly lumpy. Heat up a pan and grease it with a tiny bit of cooking oil or butter. Put about saucer sized blob of mixture and cook for about 5 minutes on each side. Serve with a dab of butter and sifted icing sugar. ENJOY!!!

Easy Vanilla Cake

I love making this vanilla cake because it is so quick and easy. You can eat it just plain, sift some icing sugar over the top or make an icing to spread over it, chocolate is nice.

Ingredients:

1 1/2 cups flour
1 cup sugar
2 teapoons baking powder
3/4 cup milk
1/4 cup melted butter
3/4 teaspoon vanilla
1 egg

Method:

Heat up an oven at 180C/350F. Mix together flour, sugar and baking powder at medium speed until combined. Add milk, melted butter, vanilla and egg. Stir thoroughly until all of the lumps are gone. Grease a cake tin with butter or cooking oil. Cook in the oven for about 20 to 30mins or until you can poke a fork into it and it comes out clean. Hope You Like It! :-)

Banana Bread

This banana bread recipe is good to eat for an afternoon snack or just to eat any time. It can also be made for a birthday or to take to a picnic.

Ingredients:

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
2 medium sized bananas
1/3 cup cooking oil
2 tablespoons milk
2 eggs

Method:

Heat up your oven to 180C/350F degrees. Mix in a bowl flour, sugar, baking powder and baking soda. In a separate bowl mix bananas, cooking oil, milk and eggs until combined. Combine both the wet and dry ingredients until mixed together. Pour the mixture into a greased bread loaf pan and cook for about 40 minutes or until a fork comes out clean. Enjoy!

Spaghetti Bolognese

This recipe is nice as a quick and easy lunch or dinner. You can alter it to make it to your taste. This is my recipe.

Ingredients:

1/2 packet spaghetti
1/4 jar tomato paste
pinch salt
pinch pepper
ground basil
ground oregano
1 bay leaf
chopped up onions (optional)
minced garlic (optional)
1 pound ground beef or pork
shredded cheese (cheddar or Parmesan)

Method:

SPAGHETTI

Boil the spaghetti on high for the length that it says on the packet. You can either use 1/2 of the packet or you can use 1/4 of the packet if you are just making it for yourself.

SAUCE

Spoon a few spoonfuls of tomato paste into a small saucepan and add some water. Stir the sauce so that it is consistent. Add a pinch of salt, a pinch of pepper, some ground basil, some ground oregano and one bay leaf to the sauce. If you want, you can add some chopped up onions and some minced garlic as well. Wait until the sauce is boiling, put the lid on the saucepan, turn the burner onto low and let it simmer until you are ready to use it.

MEAT

Heat up a fry pan and grease it lightly when the saucepan is heated up. Cook the meat until it is no longer raw (red). Stir the meat constantly. When it is ready, add some salt and pepper to the meat. Add it to the sauce and mix well. Let it simmer for a few minutes.

Once the sauce is ready, pour it into the spaghetti and mix it in well. Serve it with some shredded cheese on top. YUM!

Strawberry Milkshake

I love to make myself a cold milkshake on a hot summer's day. And it is so easy! Strawberry is my favourite but you can make chocolate, blueberry, raspberry and plenty more. Just use your own creativity to come up with your own combinations.

Ingredients:

1 scoop of plain vanilla ice cream
1 cup milk
1 tablespoon sugar
5 strawberries

Method:

In a blender blend one cup of milk, one scoop of ice cream, one tablespoon sugar and five or more strawberries. Pour into a glass and drink it up! Easy!
