Chocolate Truffles

1 can sweetened condensed milk
3/4 cup butter (4 1/2 tablespoons)
3/4 cup cocoa powder (unsweetened)
1 tablespoon vanilla extract

On stove, melt butter on low heat. Add cocoa and stir. Let cool then addmilk and vanilla. Chill for 3 to 4 hours. Roll the chocolate goop intolittle balls. Next roll balls into powdered sugar before puttingthem on a plate. Keep chilled until serving.

Whipped Cranberry Salad

1 pound cranberries
2 cups sugar
1 pound purple seedless grapes
2 Cups pecans, finely chopped
1 pint whipped cream

Grind cranberries, add sugar and refrigerate overnight. Add grapes which have been halved and seeded, nuts, and whipped cream. Refrigerate for two or three hours before serving.

Christmas Cake

1 box yellow cake mix
red gelatin, your favorite flavor
green gelatin, your favorite flavor
whipped cream
maraschino cherries

Mix and bake cake according to cake mix directions. Let cake cool. With the end of a wooden spoon, make shallow holes in the cake (do not poke all the way to the bottom of the pan). In two separate bowls, mix red gelatin and green gelatin according to box directions. Then use a ladle or large spoon to pour red and green gelatin over cake and into holes. The red and green gelatin should make a swirl. Refrigerate for several hours then top with whipped cream and cherries.

Company Salad

2 packages lemon gelatin
3 cups hot water
1 can crushed pineapple, juice reserved
1 1/2 cups miniature marshmallows
3 bananas, cubed
1 cup pineapple juice
1 egg, beaten
1 1/2 tablespoons flour
1/2 cup sugar
1/2 pint whipping cream
Sharp cheddar cheese, shredded

Dissolve gelatin in hot water. Let cool. Add pineapple, bananas, and marshmallows. Chill in 9X13 inch casserole dish several hours until firm. Heat pineapple juice over medium heat, stirring constantly. Add flour and sugar to beaten egg. Mix with juice and cook until thick, stirring constantly. Cool then fold in whipped cream. Spread over gelatin. Shred sharp cheddar cheese generously over the top. Serve in squares.



Christmas Pie

2 cups crushed Oreo cookies
1/4 cup butter, melted
1/4 cup green creme de menthe
1 7-ounce jar of marshmallow creme
2 cups whipping cream
maraschino cherries

Mix together cookie crumbs melted butter. Press crumbs to bottom and sides of a 9 inch pie pan. Chill for several hours.

Mix together marshmallow creme and creme de menthe until well blended. Fold in the whipping cream. Pour into pie pan over cookie crust. Top with maraschino cherries.

Yummy Artichoke Appetizer

1 14-ounce can of artichoke hearts, chopped
1 cup light mayonnaise
1 cup Parmesan cheese, grated
2 tablespoons green onions, minced (optional)
1 tablespoon lemon juice
1/4 teaspoon garlic salt
salt and pepper to taste

Mix together and bake at 350F degrees for 30 minutes uncovered. Serve with French bread or party crackers.

Mexican Layer Dip

1 can bean dip
1 container avocado dip
1 8-ounce package white Monterrey Jack cheese
1 small can chopped black olives
3 green onions finely chopped
1/2 jar taco sauce
1 8-ounce package cheddar cheese

In a round glass pie pan spread bean dip. Spread remaining ingredients one layer at a time in order listed. Refrigerate. Serve with tortilla chips.

Super Spinach Dip

1 cup light mayonnaise
1 cup light sour cream
1 package frozen chopped spinach
3 green onions, chopped
1/8 cup lemon juice
1 tablespoon dill weed
1 tablespoon accent spice
1 loaf Hawaiian bread

Mix ingredients together and chill overnight. Hollow out Hawaiian bread and chop up bread for dipping. Spoon dip into hollowed out bread. Serve with raw vegetables and bread for dipping.
