How about pancakes?
by: Clarissa the mom chef

My family's favorite easy and nutritious breakfast is pancakes. With eggs and milk in the mix, you get the protein you need for your brain to function well and the flour gives you the carbs for energy to get you through til lunch. You can also add fruit slices or a dollop of yogurt or cream. My kids like to smear honey on their pancakes.

Here's our favorite pancake recipe. You can make it ahead of time and keep it in a covered container in the fridge so all you have to do is stir and cook in the morning!

Easy Pancake Recipe

1 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 medium egg, beaten
1 cup milk
1/4 cup vegetable oil (we use pure olive oil)

In a bowl mix together dry ingredients (flour, baking powder, and salt). In another bowl add milk, egg and oil and stir. Add dry ingredients to wet
ingredients and stir just until it's mixed but still a little lumpy.

Heat frying pan, add some oil, then spoon batter to make a medium-sized pancake. Wait until pancake bubbles and browns on one side, then flip using a spatula (for young kids, have your parents do this part). Cook on the other side, then remove from pan.
