Mint Chocolate Cake Slice

A sweet and delicious blend of chocolate, coconut, and peppermint.

INGREDIENTS

50 grams (1/4 cup) butter
1 cup milk
2 tablespoons cocoa
1/2 cup of WHITE sugar
3 tablespoons BROWN sugar
1 1/2 cups white flour
1 cup of coconut, chopped or crushed
3 finely chopped or crushed up candy canes
1 cup chocolate chips (optional)
1 teaspoon baking powder

METHOD

Preheat oven to 180C (350F) degrees. In a pot melt white sugar, cocoa, butter and half of the milk.

In a bowl sift flour and baking powder. Pour the cocoa mixture in the bowl with the flour. Mix. Put brown sugar in and mix well. Add milk.

Now it should be a bit sloppy but that's OK. Add coconut and chocolate chips and stir. Add chopped or crushed coconut.

Cook for 10-20 minutes. Check oven every 5 minutes. When cooked it should look puffy like bubbles. Dust with icing (powdered) sugar while hot and cut while hot. Serve either hot or cold with whipped cream or just as it is.
