Irish Boxty

Try this authentic Irish boxty potato recipe.

Ingredients:

1/2 pound (or 1 cup) potatoes,peeled,boiled and mashed
1/2 pound potatoes, peeled finely grated and squeezed dry
3/4 cup flour
1 egg, beaten
1/2 cup milk
salt and pepper - to season
oil for frying

Method:

Mix the potatoes, flour, egg, milk ,salt, and pepper together well in a large bowl.

Heat a generous amount of oil in a skillet or sauté pan. Drop about 2 tablespoons of batter at a time into hot oil and spread out into a round about 1/2-inch thick . Fry until underside browns , then flip and brown the other side.

Remove to a paper towel-lined plate and repeat with the rest of batter. Finished boxty can be held in a warm oven until serving.
