Huge Hit Citrus Bars

This recipe is a huge hit and simple to make.

Prep time:15 minutes
Bake time 52 minutes

Ingredients:

Shortbread Crust
1 cup butter
1/2 cup powdered sugar
2 cups of all-purpose flour

Filling:

1 3/4 cup granulated white sugar
1/3 cup fresh lemon juice
1 tbsp lemon zest
1/3 cup orange juice or lime juice
1 tablespoon orange or lime zest
4 eggs
1 teaspoon baking powder
1/4 teaspoon of salt
1/4 cup of flour

Preheat oven to 350F (180C) degrees. In a medium bowl cream butter and sugar till fluffy, then add flour a small amount at a time. Beat until mixture form a ball(to avoid batter stuck in beaters I use my hand when mixture starts to form a ball).

Press crust in 13 x 9 inch baking pan. Bake for 20-22 minutes or until golden brown.

While crust is baking grab another medium bowl and whisk together citrus juices and sugar. Add 4 eggs to mixture and zest. In a small bowl sift together flour, salt and baking powder. Add flour mixture to liquid mixture and combine with a wooden spoon.

Once crust is cooked and cooled (about five minutes) pour citrus mixture over top. Place in oven (350F degrees) and cook till set, about 30 minutes! Once set take out of oven and sprinkle with powdered sugar and garnish with lemmon, lime or orange zest. Let the bars cool the cut into squares..... and enjoy :D
