Cold Pancake with Chocolate Coating

Try these cold pancakes. You may add some sprinkles or chocolate chips.

Kids will love them :)

Ingredients:

1 cup butter or margarine
1 cup sugar
2 cups all purpose flour
2 1/2 evaporated milk
1-2 eggs (depends on your taste)
1 teaspoon vanilla extract
1 pinch of baking powder
*small amount cooking oil (for cooking)

Procedure:

Put the margarine or butter in a bowl together with the sugar. Mix until they will stick together. Then add the egg and small amount of evaporated milk. Add all the flour slowly and the pinch of baking powder but continue mixing until it will become a little bit thick. Pour the vanilla extract. Mix together. *if you want to add some chocolate chips to add some surprise.. :)..

Cooking procedure:

Heat the pan, not too much flame just enough not to burn the pan cake. Put some small amount of oil so it will not stick on the frying pan.

Chocolate coating:

Ingredients:

1 1/2 cups of evaporated milk
1/2 sugar
1/2 cup of cocoa
1/2 tsp of cornstarch **dissolved in hot water

Procedure:

Heat the separate pan. Mix all the ingredients slowly. Make it boil and add the cornstarch that has been dissolved by water. Boil it until it'll become thick enough. Remove heat and place inside the freezer first for 5 minutes.

For the combination:

After all the number of pancakes are made, put it first at room temperature for 10 minutes.

On a tray, place non stick cookie paper then place the pancakes separately and cover with the chocolate.

Put it in the freezer for 30 minutes.
