Classic No Bake Cookies

by Rachel and Jonathon
(USA)

After trying several no bake cookie recipes, our family settled on this one because it is the most tasty.

1 3/4 cup sugar
1/2 cup milk
1/2 cup (100 grams) butter
4 Tablespoon cocoa
1/2 cup crunchy peanut butter
3 cups quick cooking oats
1 teaspoon vanilla

In a medium saucepan, mix sugar, milk, butter and cocoa. Bring to full boil on medium to medium high heat, then let boil for 90 seconds. Remove from heat and immediately add peanut butter, oats and vanilla. Stir well then drop cookie sized portions onto foil or wax paper. Let cool before serving.

Note: Start your timer or begin to count to ninety as soon as bubbles cover the entire surface. I like to stir once or twice once it begins to boil. Make sure not to boil for more than 90 seconds or the cookies will be crumbly and dry. If you boil for less time, they will be too soft and not set properly.
