Chocolate Mousse

Here's a recipe that kids and adults love.


11 ounces semi-sweet chocolate bits
3/4 butter, broken into pieces
5 egg yolks
8 egg whites
3 1/2 tablespoons sugar

Melt chocolate with butter (I used to use double boiler but you can now use the microwave). Add beaten egg yolks. Beat egg whites separately until fluffy. Half through, add sugar. Finish beating. Add chocolate mixture. Chill.

Yields 5 1/2 cups.

Note: I used to use margarine for this recipe but I actually think butter might be healthier. When we used Parve (non-milk) margarine it was a non-dairy Passover dessert. Now we have on special occasions during the year and serve it with homemade whipped cream.
