Broccoli Recipes



Broccoli is so good for you; it's an excellent source of vitamin A and C. Broccoli is in season most of the year and can be found at your fresh food grocer's. If you can't find fresh broccoli, buy frozen broccoli - it's snap frozen and still very nutritious.

If you're having trouble getting your kids to eat broccoli, try these simple broccoli recipes.

Sweet and Sour Broccoli

1 package frozen broccoli (or 1 pound fresh broccoli, cut)
1 can water chestnuts
2 tablespoons soy sauce
1 tablespoon honey
1/4 teaspoon white pepper
1/4 cup peanuts

In a saucepan, cooked broccoli in a small amount of boiling waterfor about 10 minutes until tender. Add water chestnuts at the end to heat them for about one minute. Drain broccoli (you can save the water and drink it - it's good for you!) and place broccoli and water chestnuts in a serving bowl. Add pepper.

Heat soy sauce and honey in a saucepan on low heat until honey is dissolved. Pour over broccoli. Sprinkle peanuts on top.


Broccoli Bake

2 cups broccoli, cut
2 tablespoons butter
1 tablespoon all-purpose flour
2/3 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil
1/2 cup Velveeta cheese
1/2 cup bread crumbs

Preheat oven to 350F degrees (180C). Cook broccoli in a medium saucepan by boiling in a little water for about 4-5 minutes until tender but not soft. Drain well.

Melt 1 tablespoon butter in a saucepan, then add flour, salt, pepper, and basil. Stir well then add milk. Cook milk mixture over medium heat until it is thickened. Add Velveeta cheese and stir until melted. Add broccoli and stir. Place broccoli and cheese sauce in a casserole dish. Melt 1 tablespoon butter and add breadcrumbs. Sprinkle over broccoli.

Bake for 20 minutes. Serve while hot.


Almond Broccoli Spears

1 pound fresh broccoli
1/2 tablespoon salt
1/4 tablespoon pepper
1/4 stick butter
1/3 cup slivered almonds
2 tablespoons lemon juice

Cut broccoli into spears. Sprinkle with salt and pepper.Cook broccoli in a steamer for about 3 minutes until tender but slightly crisp.

Melt butter in saucepan and add almonds. Place broccoli spears in a circular design on a serving plate. Sprinkle with lemon juice then pour butter sauce and almonds over the broccoli.
