Ultra Easy Impossible Pie

This is a favorite in our family, ultra easy and super quick to make. You can make it any time of year and add different things to make different flavors.

I got the original recipe off a calendar from Saint Catherine's Hospice in Yorkshire, England but I've added cocoa and peppermint essence, especially nice for Christmas. Heaps of fun for kids to make and experient with by adding differnt flavors, sultanas etc.

You need:

4 eggs
1 cup sugar
2 cups milk
1/ cup flour
1 cup coconut
1 teaspoon cocoa
1/4 cup margarine
1 teaspoon vanilla essence
dash of orange or pepperment essence
pinch of salt
  • Put all ingredients into blender (I use a bowl and mix by hand).

  • Pour mixture into a pie dish (original recipe says 10 inch), I just use a china cassrole dish.

  • Cook at 350F (180C) degrees for 1 hour (or just till it's cooked - Knitting needle test!)

When it's cooked - you won't believe it - the pastry is on the bottom, custard in the middle and coconut mix on the top!
