Sweet Corn Tart / Fritters

Bake tarts or fry up some tasty fritters with this easy sweet corn recipe.

Ingredients:

1 can of sweet corn
2 eggs
60 ml sugar
60 ml margarine or oil
60 ml flour
5 ml baking powder

Tart Method:

Lightly beat sugar, oil, and eggs together. Add the can of sweet corn and mix well. Sift flour and baking powder in whilst mixing well.

Pour into greased oven dish (approximately 15 cm x 20 cm). Bake at 180C (350F) degrees for 30 to 40 minutes.

Let tart stand for about 1 hour to set before serving. Ideal for home freezing

Fritters Method:

Add additional 100 ml flour plus 5 ml baking powder. Add Spoonfuls of batter to greased frying pan and fry until brown.
