Scotch Pancakes

These pancakes are perfect for breakfast in bed!


Makes: 15 pancakes

Ingredients:

1 egg beaten
1 cup (240ml)milk
1 3/4 cups (200g) refined flour
1 1/2 teaspoon baking powder
1 tablespoon powdered sugar
1/2 teaspoon salt
4 teaspoon butter

1. Mix egg and milk.

2. Sift together flour, baking powder, salt and powdered sugar, 3 times. Place in a bowl. Make a well in the center. Add egg-milk mixture. Gradually fold in flour mixture till flour is just moistened.

3. Heat a pan in which you make pancakes on high heat for about 2 minutes till a drop of water forms a tiny ball which bounces.

4. Reduce heat to low. Spread 1 teaspoon butter all over pan. Drop 1/8 cup batter at a time. Cook till bubbles form on pancake and edges appear dry (3 minutes). Turn over. Do the same for the remaining batter.

*If you are creative, add chocolate chips or peanuts to the batter.
