Stop Light Kabob Recipe

Hi Kiran,

I recommend the Stop Light Kabob recipe using three main ingredients (red, yellow, and green).

This is a grilled recipe and I would normally make it with cubed beef. You can include the beef or leave it out. You use the following vegetables:

Green vegetable (green pepper or zucchini)
Yellow vegetable (squash or yellow pepper)
Red vegetable/fruit (cherry tomato or red pepper)

Chop vegetables (and beef if you like) into 1 inch cubes. Brush with olive oil, salt and pepper. Place on a wooden skewer in order to make a stop light that is green/yellow/red. Cut off sharp ends. Grill for 8 minutes, turning every 2 minutes.

You can also make a fruit kabob using the following fruits:

Green fruit (sliced kiwi fruit or green grapes)
Yellow fruit (pineapple chunks or banana slices)
Red fruit (whole strawberries or maraschino cherries)

Place fruit (whole, slices or chunks) on wooden skewers in stop light order. You can serve the fruit kabob with a dip such as melted chocolate, whipped cream or ricotta cheese.
