Lemon Pudding

Once I started cooking these little lemon puddings, this recipe became a family favourite. It's great for those who have a lemon tree in their back garden.

90 grams (4/10 cup) soft butter
1 1/2 cups of caster sugar
1 1/2 cups of milk
3 eggs
1/2 cup of lemon juice
1/2 cup of all-purpose plain flour
1 teaspoon of baking powder

1. Pre-heat the oven to 180C degrees (355F).

2. Place the butter, sugar, milk, eggs, lemon juice, flour and baking powder in a food processor and process until smooth.

3. Pour mixture into 6 x 1 cup capacity greased ramekins or oven proof teacups.

4. Bake for 20 - 25 minutes or until golden.

Serve warm with vanilla ice-cream.

Serves 6.
