Jumbo Chocolate Chip Cupcakes
If you love chocolate chips, make this easy cupcake recipe. You can add chocolate icing on top.
100 grams (3.5 ounces) margarine
100 grams (3.5 ounces) caster sugar
2 large eggs
100 grams (3.5 ounces) self-raising white flour
100 grams (3.5 ounces) plain flour
Makes 8 or more jumbo chocolate chip cupcakes.
Preheat oven 190C (375F)degrees (gas mark 5). Put muffin paper cases in jumbo muffin tray.
Put margarine, eggs and flour in large bowl and use a whisk. Beat together until smooth. Fold in chocolate chips. Spoon into paper cases (fill about 2/3 full).
Bake the cupcakes in preheated oven for 20-25 minutes, or until well risen and golden brown. Transfer to a wire rack to cool.
