Jessica's Favorite Mounds Bar Cookies

These bar cookies are made with chopped up Mounds candy bars, chocolate chips, and flaked coconut.

1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup cake flour
1/4 teaspooon baking powder
1/4 pound butter, melted
2/3 cup light brown sugar
2 eggs
1 1/2 teaspoons of vanilla extract
4 Mounds candy bars (1.9 ounces each)
1/3 cup flaked coconut
3/4 cup chocolate chips

Preheat oven to 350F (180C) degrees. Film 9 x 9 x 2" baking pan with nonstick cooking spray.

Sift flour, cake flour, baking powder on wax paper.

Whisk melted butter and brown sugar in a medium bowl, using a whisk. Blend in eggs and vanilla extract. Stir in the sifted mixture with a wooden spoon. Then stir in chopped up Mounds, flaked coconut, and chocolate chips.

Scrape batter into pan and spread evenly. Bake 30 minutes or until golden brown.

Freshly baked, the bar cookies keep 3 days.

this recipe is so great for a family camp out by the beach! and if you are asked to bring a dessert to a party etc. this is quick easy thing to pop in the oven!!
