James's Eggs

by Heather Caparoso
(Westminster, CO, USA)

Here's a breakfast recipe you can make with your young child.

2 eggs
1 spoonful milk
salt
pepper
pinch tarragon

Let child sit next to you on counter. Break eggs into bowl and let child beat them up with a fork or whisk as you add the milk, salt, pepper, and tarragon.

Go to stove and heat up frying pan. Add a pat of butter and cook eggs as child watches.

Sit down and eat eggs with child, and with toast, or rice, or pancakes, or whatever the child wants!
