Indian Roasted Vermicelli Soup

You can buy dry roasted (or toasted) vermicelli noodles at the Indian grocer. Vermicelli are extremely fine noodles (finer than angel hair pasta) and very delicate. Try this Indian recipe.

Ingredients:

3 cups roasted vermicelli
4 cups (400 ml) whole milk
sugar to taste

Process:

Heat the milk and sugar in a pan and bring it to boil slowly. Add the vermicelli to the boiling milk and keep stirring until vermicelli goes soft.
This process will take about 6 to 8 minutes.
After the vermicelli is cooked let the mixture cool for 5 minutes. Serve with honey and roasted cashews.

Serves 3.
