Grandma's Pea Dish

by Bryan Crutcher
(Wiarton, Ontario, Canada)

I am not a kid (age 67)but this recipe is simple and nutritious - almost any kid can make it. My grandma was quite poor and this dish was used as a money extender and is still a family favorite.

Ingredients:

1 can of sweet peas
2 strips of side bacon
1 onion (optional)
1/2 tablespoon of flower
2 slices of bread cut into small cubes (croutons)

Method:

Cut bacon into pieces 1 cm (1/2 inch) long. Dice onion. Fry bacon and onion in large skillet until onion is soft and bacon is crisp. Remove from pan.

Pour in the juice from the can of peas. When the juice starts to simmer add the flour and stir in thoroughly.

Add the peas bacon and onion and heat thoroughly.
Sprinkle bread cubes on top. Broil in oven until bread is browned. Serve.

Makes a meal for two people.
