Enchilada Rice

by Sam
(Oregon, US)

Try this simple recipe for enchilada-style rice.

1 package of frozen ground beef
1 can of corn
1 packet of taco seasoning
1/2 cup of shredded cheese
2 packets of boil-in-bag rice

Follow the directions on the box of rice to boil and drain your rice to a fluffy stage.

While your rice is boiling, defrost meat in the microwave oven for 10 minutes. Heat a large pan on your stove to high and fry your defrosted beef until it is a light brown color. Then pour the whole can of corn into the pan, stirring frequently.

After 30 seconds, you can pour your seasoning into the pan along with a majority of the cooked rice. Stir for 30 seconds and admire your masterpiece. Then apply 1/2 cup of shredded cheese and let melt.
