Easy Tofu Bean Rice Dish

A healthy meal that's tasty. A great way to get kids to eat tofu and veggies.
1 cup rice
2 tablespoons lima beans
1/4 - 1/2 pound tofu (firm /extra firm )
mixed veggies (whatever your kid likes)
1 teaspoon Oil
salt to taste
1 teaspoon soy sauce
Boil the rice on stove or in the microwave and set aside.
Now pour oil in a pan or wok and fry tofu. Add the boiled veggies and lima beans. Mix them well then add soy sauce and salt.
You can top with some chopped tomatoes and shredded cheese. Serve with a warm tortilla.
Preparation time: 20 minutes.
