Easter Egg Fried Rice

This has been an Easter tradition for years in our family! The kids love fried rice, and the hard boiled eggs are a great meat substitute!

3 cups cooked rice
1 1/2 cups (12 oz bag) frozen vegetables peas & carrots
1/4 cup minced green onions (optional)
3 hard boiled Easter eggs, peeled and diced
1 package fried rice seasoning mix OR
(1/2 tsp garlic powder, 1/4 tsp ginger, 1 tsp salt, 1/2 tsp black pepper mixed together)
3 tablespoons canola oil
Soy sauce to taste


In a large skillet heat oil. Put in one cup of cooked rice and frozen vegetables. Turn down to medium heat.

Stir fry until vegetables are thawed and half cooked, add green onions (optional) the other two cups of rice and stir fry seasoning. Mix in pan scraping the rice off of bottom so it doesn't burn. Add eggs and soy sauce to taste. Serve hot.

Makes four servings.
