Decadent Triple Chocolate Walnut Biscotti

My daughters and I came up with this SIMPLE recipe. Nothing intimidating about biscotti now! These are delicious and easy; the chips in the mix are a nice treat and the nuts add nutrition. These are triple chocolate: chocolate-based dough with white and dark chocolate chips. Double's good if you lack white chocolate chips.


1 (7.4-ounce) package chocolate chocolate chip muffin mix (we used Martha White brand but others work too)
2 Tablespoon extra light olive oil
1 Tablespoon butter
2 Tablespoon sugar
1 egg
1 teaspoon vanilla extract
1/3 cup coarsely chopped walnuts (almonds are a nice variation)
1/3 cup white chocolate chips

Directions:

In a medium bowl, cream together oil, butter and sugar. Mix in egg and vanilla. Add muffin mix, stir well, and fold in nuts and white chocolate chips. On a parchment-lined cookie sheet, flatten dough with greased fingers into a 9 by 4 inch flat log that's about ½ inch thick.

Bake at 375F (190C)degrees for 20 minutes. Remove, slice into 10-12 pieces (cut on the diagonal) and turn pieces on side. Cook for 5 minutes, flip to the other side and cook for 3-5 more minutes. (Stay alert and watch carefully so edges do not burn.) Cool completely, and enjoy with tea.

I am not a mix user, but this one time was a good choice to try one. With a family of chocolate lovers, it turned out to be a good pick and gave us a new way to enjoy a chocolate treat. I would like to make a similar biscotti after figuring out the mix!
Good one for kids to try!

I have to say that I actually made these, and they are really very good. I kept them in a tin in the garage (kitchen was too close) but they kept calling to me...and I kept eating them, because they were not too sweet....

Good thing I don't have too much muffin mix lying around!

This is a great recipe - my girls really liked making it and serving it to their grandparents. Its definitely doable, and we like the suggested substitutions.

Always looking for Better Biscotti

I love biscotti, but the chocolate versions often seem drab. The walnuts and bi-colored chips offer richness to this relatively healthy cookie. It's an easy recipe and a step up from regular chocolate chip cookies. Great for a book group snack or bake sale, and something kids won't have trouble making themselves.
