Dad's Goofy Stuff

by Erik Bryant
(Anchorage, Alaska, USA)

Here's a clever recipe by a dad who used his creativity to make a quick desert with only a few ingredients around.

You Will Need:

strawberry preserves
creamy peanut butter
marshmallows
wax paper
apple corer
2 pastry bags

I had promised my girls a desert and I forgot. I ran upstairs and of course there was none of the regular junk in the house. Pantry yielded most of a bag of semi-stale large marshmallows. Fridge showed me the strawberry preserves. Creamy peanut butter in the kitchen cupboard.

Thinking quick I loaded a pastry bag with strawberry perserves and creamy peanut butter. Sheet of wax paper on the counter, apple corer out and punched out the center of each of the marshmallows. I figured a dozen would be about right (and the centers made a nice treat for me). Setting them on the wax paper I called my girls. The youngest I had give each hollowed out marshmallow a squirt of peanut butter. The older of my two girls followed her with a squirt of strawberry preserves. Both girls cried "ewwewww" while giggling. Just 5 minutes in the freezer set every thing up. We ate them watching the new Tinker Bell movie!
