Valentine's Day

Chocolatey Cocoa Nuggets

by Margie Papetti
(Lilburn, Georgia, USA)

My girls LOVE these yummy goodies and they often help me make them. We have always enjoyed baking together.

1 3/4 cups flour
1/2 cup unsweetened baking cocoa
1 cup (2 sticks) butter or margarine, softened
2/3 cup sugar
1/2 teaspoon vanilla
1/8 teaspoon salt

TOPPING:
3 tablespoons confectioners' sugar
3 tablespoons unsweetened baking cocoa

Combine flour, cocoa and salt. Set aside.

In another bowl, cream butter/margarine and sugar until light and fluffy. Add flour mixture to creamed butter and sugar mixture and then add the vanilla. Mix together until well blended.

Cover the bowl of dough and put in the fridge at least 2 hours.

Preheat oven to 350F (180C) degrees just before dough has chilled enough. Lightly grease 2 cookie sheets. Take a teaspoonful of dough for each cookie and roll into balls about an inch across and place on the cookie sheet about an inch apart.

Bake for about 12 minutes. let them stand on the cookies sheet for a few minutes before removing and placing on a cooling rack.

Mix together the 3 tablespoons of confectioners' sugar and cocoa in a shallow bowl or plate. Roll the cookies in the mixture and place back on the cooling rack.

Enjoy!
