Chocolate Lava Eruption Cake

by Shawn Parr
(Evansville, IN, USA)

I made this recipe up when I was a kid and would add other things like Oreos and worms. But this has been a fun recipe that tastes good for all ages. Make sure that you place on a bigger platter to reduce all the decorations and sprinkling. I am now in college and all my friends love when I make this at our get-togethers.

Cake:

1 chocolate angel food cake (store bought)

Lava Icing:

1 packet of white chocolate pudding mix
2 cups of Cool Whip
red food coloring

Decorations:

½ cup of chocolate chips
red sprinkles
1/2 bag sweeten coconut
red food coloring
8 large strawberries

Directions:

Step 1: Place angel food cake thicker side down.

Tip: When making the pudding, cut the milk in half (so only 1 cup) for thicker icing.

Step 2: Once the pudding is set fold in the Cool Whip.

Step 3: Add food coloring and continue to fold in the icing to make deep red-like lava.

Step 4: Pour in center of the cake and down the sides to look like lava.

Step 5: Sprinkle the chocolate chips into the lava to look like rocks.

Step 6: Place the coconut into a zip lock bag and add 10 drops of food coloring.

Step 7: Place the coconut around the bottom of the plate for decoration.

Step 8: Place strawberries evenly around the cake.

Step 9: Cut, serve, enjoy.
