Chocolate Chunk Marshmallow Ice Cream Sundaes with Warm Chocolate Sauce

We make a lot of ice cream in our house - it is easy and fun, and everybody loves it. Here is a recipe that is particularly popular with young chocolate lovers, which includes a very simple but very delicious chocolate sauce . . .

Ice Cream:

2 cups heavy cream
1/2 cup half n half
3/4 cup sugar
1 cup chocolate pudding
3/4 cup chopped milk or semisweet chocolate
3/4 cup mini marshmallows

Sauce:

4 ounces semisweet chocolate, chopped
2 tablespoons unsalted butter
2 tablespoonsheavy cream
1/8 teaspoon vanilla extract
dash salt

Topping suggestions:

whipped cream, chopped nuts, crumbled Oreo cookies, maraschino cherries

Combine all ingredients except for the chopped chocolate and marshmallows in a large bowl and stir until the sugar dissolves. Pour mixture into the canister of a 1 quart ice cream maker and follow the maker's instructions for freezing.*

Once the ice cream stops churning, remove the paddle and stir in the chopped chocolate and marshmallows. Spoon the ice cream into a freezer-safe container, cover and place in the freezer for 1 hour only (if you prefer soft ice cream just serve it right away).

To make the sauce, place chocolate in a microwave-safe bowl and heat on medium (30% to 50%) power for 30 seconds. Stir; then keep heating 10 seconds at a time until it is melted and smooth, stirring each time. Add butter and stir until mixed. Stir in cream, vanilla and salt.

To serve, scoop the ice cream into bowls. Spoon warm sauce over the top and add your favorite toppings. Yum!!

Yield: 8 servings.

*Ice cream makers are easy to use - with most, all you have to do is put the paddle into the canister, cover, snap the motor into place on top and plug it in - parents can help younger kids).
