Cheesy Potato Patties

These potato patties are bursting with mozzarella cheese.


Ingredients:

1 potato per person
1/2 mozzarella cheese stick per person
1 handful mozzarella cheese per perosn
olive oil
salt
pepper
cilantro (optional)

How to Prepare:

Put potatoes in microwave (about 2 1/2 minutes for every potato). When done, peel potatoes and mash in a bowl. Add salt, pepper, and cilantro.

Shape potatoes into small patty forms. Cut up the cheese stick into small discs. Put 5 cheese discs on half of the patties. Place the patties without cheese discs on top of the patties with cheese discs.

Heat pan on medium, drizzle olive oil in a frying pan, and let sit until hot. Place the patties in the pan and slightly drizzle more olive oil onto the patties and pan.

Cook for 5 minutes, flipping them half way through. Add shredded mozzarella on top of the patties 1 minute before done so they melt.

Serve and enjoy!!!
